You know that dish everyone begs you to bring to family gatherings and potlucks? For me, it’s always been my signature chicken salad. As soon as I’d walk in the door, container in hand, you’d hear the excited whispers: “Oh my, Necee made her chicken salad!” It’s had a cult following for years, and I’ve always loved seeing the joy it brings to others.

After losing my mom to her third battle with cancer in 2022, I was reminded how short life really is. If I was going to make a change, now was the time. With the unwavering love and support of my husband, Jamie, my family, and close friends, I decided to take that leap of faith.

In September 2022, I left my corporate career behind and poured my heart – and my mom’s memory – into a little food trailer. I launched Necee’s Chix Fix, Knoxville’s first-ever chicken salad food truck and mobile catering service. And wow, the response has been incredible!

But the real magic happens when I see people take a bite of my chicken salad and light up. In that moment, I know I’m sharing something special
